Simple Soft-Inner Crunchy-Outer Cookies Great for Health-Conscious Folks
This recipe has been made and eaten many times. It's one of those easy-to-make recipes you want to memorize by heart. The #cookies are soft yet #crunchy at the same time, and #hearty yet not too filling, just enough to be a nice #teatime snack to share among friends. Even Heartbroken Molly says she will make it again as soon as she takes a break from watching her favorite movie The Break-Up on repeat.

"I came up with the recipe — I still remember — as a way to apologize to my wife that day. So I personally call these 'I'm Sorry Cookies'. She loved them and they got the job done. She's sensitive to gluten and carbohydrate-conscious so I wanted to create a simple cookie that she can eat without having to worry."
Healthy and Nutty Gluten-Free Oatmeal Cookies
Prep Time: 10 minutes Cook Time: 20 minutes
Servings: 12 cookies
Ingredients
1/4 cup melted coconut oil
1/4 cups brown sugar (I use Sugar In The Raw)
1 large egg
1 cup almond flour (super fine)
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups old fashioned oats
1 cup mixed nuts
Optional chocolate chips as needed
Directions
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper.
Mix together in a bowl melted coconut oil, brown sugar, and then egg until smooth.
Sift and mix in the almond flour, cinnamon, baking soda, and salt. Combine well.
Add and combine the oats until it's fully into the cookie dough, and then the mixed nuts and chocolate chips(optional).
Separate the dough into 12 pieces and flatten each slightly.
Bake until set, about 20 minutes.
Smell the goodness deliciousness because it's done!
